This is vegetable seasoning with intent.

Our Veggie Rub was developed especially for Oil & Vinegar as a fresh, herb-led rub designed to bring out the best in vegetables. Built around lemon and herbs — including rosemary, oregano, mint and marjoram — it delivers brightness, warmth and balance without leaning heavily on salt.

With a reduced salt content (18%), flavour comes from herbs and spices rather than seasoning alone. Clean, aromatic and versatile, it works beautifully across oven cooking and BBQ.

How to use it

This rub works equally well dry or wet.

Dry rub

• Toss vegetables with olive oil

• Sprinkle generously with the rub

• Roast or grill until golden

Wet rub / marinade

• Mix the rub with olive oil

• Leave to infuse for around an hour

• Coat vegetables before cooking

Ideal for peppers, courgettes, aubergine, mushrooms, carrots, potatoes — or anything that benefits from heat and a little char.
